You all seemed to like the DIY Pizza Party so much that I thought I would share how we hold our Mexican fiesta nights too! It’s another simple way to get the family round the table and enjoying food.
The simple concept is place a load of Mexican themed foods on the table and let everyone help themselves. All we had out was:
- Minced beef with onions and red peppers
- Cheesy Nachos
- Peas and broccoli
- Leftover roast potatoes (usually potato wedges)
- Sour cream and chives
- Grated cheese
Then everyone took their seats and dug in.
For the cheesy nachos we bought plain Doritos and used the leftover tomato pasata from our pizza party along with a lot of grated cheese then baked them, for about 5-10 minutes, until slightly browned. The meat was fried in a tablespoon of olive oil with the onions and peppers; as well as some spices from an Asda taco kit, two tins of baked beans and a tin of kidney beans along with the rest of the pasata.
Two minutes in the oven was all the tacos needed.
To add to the fiesta element you could go all out and get some cheap sombreros, how about some fake mustaches! At the end of the night all the plates were clean and we didn’t have a single leftover. I have to say Mexican night is definitely a favorite on my list of themed nights.
